Farro Salad with Cherries, Feta & Mint
1 cup farro, rinsed
1/4 cup chopped mint, plus extra for garnish
2 cups pitted cherries, halved
1/2 cup crumbled feta
1 tbsp za'ata Kosher salt
1/4 tsp chili flakes
Freshly ground black pepper
3 tbsp sherry vinegar or lemon juice
3 tbsp extra virgin olive oil
Cook farro as directed, let cool.
Combine farro, 1/4 cup chopped mint and 1 tablespoon za’atar, salt, pepper, 2 cups pitted cherries,
1/2 cup crumbled feta, and chili flakes.
Add the sherry vinegar or lemon juice and drizzle in the olive oil.
Garnish with reserved mint leaves and more salt and pepper, if desired.
